Southwestern Chicken Salad – A Flavor-Packed Tex-Mex Favorite

  • 2 chicken breasts, grilled and sliced

  • 1 cup black beans (rinsed and drained)

  • 1 cup corn (grilled or canned)

  • 1 avocado, diced

  • 1 cup cherry tomatoes, halved

  • 1 bell pepper, diced

  • 1/4 red onion, thinly sliced

  • 1/4 cup cilantro, chopped

  • 1/2 cup shredded cheese (cheddar or cotija)

  • 4 cups romaine lettuce, chopped

  • Dressing: 1/2 cup ranch, 1 tbsp lime juice, 1 tsp chili powder

Instructions

  1. Season and grill chicken until cooked through, then slice.

  2. Prepare corn (grill or skillet).

  3. In a large bowl, combine lettuce, beans, tomatoes, peppers, onion, and cilantro.

  4. Add chicken, corn, avocado, and cheese on top.

  5. Mix dressing ingredients, drizzle over salad, and toss.
