2 chicken breasts, grilled and sliced
1 cup black beans (rinsed and drained)
1 cup corn (grilled or canned)
1 avocado, diced
1 cup cherry tomatoes, halved
1 bell pepper, diced
1/4 red onion, thinly sliced
1/4 cup cilantro, chopped
1/2 cup shredded cheese (cheddar or cotija)
4 cups romaine lettuce, chopped
Dressing: 1/2 cup ranch, 1 tbsp lime juice, 1 tsp chili powder
Season and grill chicken until cooked through, then slice.
Prepare corn (grill or skillet).
In a large bowl, combine lettuce, beans, tomatoes, peppers, onion, and cilantro.
Add chicken, corn, avocado, and cheese on top.
Mix dressing ingredients, drizzle over salad, and toss.
