1 cup pumpkin puree
2 large eggs
1/2 cup Greek yogurt
1/3 cup maple syrup
1 tsp vanilla extract
1 cup oat flour (or ground oats)
1/2 cup vanilla protein powder
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp pumpkin spice
Pinch of salt
Optional: 1/3 cup chocolate chips or nuts
Preheat oven to 350°F (175°C). Line or grease a muffin tin.
Whisk pumpkin, eggs, yogurt, syrup, and vanilla.
Mix dry ingredients in a separate bowl.
Combine wet and dry. Stir until just mixed.
Fold in chocolate chips or nuts if desired.
Fill muffin cups 3/4 full.
Bake 18–22 minutes until a toothpick comes out clean.
