Pumpkin Protein Muffins – A Healthy Fall Treat You’ll Love

  • 1 cup pumpkin puree

  • 2 large eggs

  • 1/2 cup Greek yogurt

  • 1/3 cup maple syrup

  • 1 tsp vanilla extract

  • 1 cup oat flour (or ground oats)

  • 1/2 cup vanilla protein powder

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp cinnamon

  • 1 tsp pumpkin spice

  • Pinch of salt

  • Optional: 1/3 cup chocolate chips or nuts

Instructions

  • Preheat oven to 350°F (175°C). Line or grease a muffin tin.

  • Whisk pumpkin, eggs, yogurt, syrup, and vanilla.

  • Mix dry ingredients in a separate bowl.

  • Combine wet and dry. Stir until just mixed.

  • Fold in chocolate chips or nuts if desired.

  • Fill muffin cups 3/4 full.

  • Bake 18–22 minutes until a toothpick comes out clean.
