1 lb smoked sausage, sliced
4 medium potatoes, diced
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 bay leaf
1 tsp thyme
Salt and black pepper to taste
Brown sausage in a large pot; remove and set aside.
Sauté onion, celery, and carrots until softened. Add garlic and cook briefly.
Add potatoes, seasonings, and broth. Simmer 15-20 minutes until potatoes are tender.
Mash some potatoes to thicken. Stir in cream and return sausage. Simmer 5 minutes.
Garnish with parsley and serve hot.
