Potato and Sausage Chowder – A Cozy, Creamy Comfort Soup

  • 1 lb smoked sausage, sliced

  • 4 medium potatoes, diced

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 1 bay leaf

  • 1 tsp thyme

  • Salt and black pepper to taste

Instructions

  • Brown sausage in a large pot; remove and set aside.

  • Sauté onion, celery, and carrots until softened. Add garlic and cook briefly.

  • Add potatoes, seasonings, and broth. Simmer 15-20 minutes until potatoes are tender.

  • Mash some potatoes to thicken. Stir in cream and return sausage. Simmer 5 minutes.

  • Garnish with parsley and serve hot.
