Philly Cheesesteak Soup: A Comforting Twist on a Classic

  • 1 lb thinly sliced ribeye (or sirloin/roast beef)

  • 1 green bell pepper, sliced

  • 1 onion, sliced

  • 3 garlic cloves, minced

  • 5 cups beef broth

  • 1 cup heavy cream

  • 2 tbsp butter

  • 2 tbsp flour

  • 1 tbsp Worcestershire sauce

  • 6 slices provolone cheese

  • Salt & pepper to taste

Instructions

  • Sear beef in hot oil, set aside.

  • Sauté onions, peppers, and garlic in butter.

  • Add flour, cook 2 minutes.

  • Pour broth and Worcestershire, simmer 10 minutes.

  • Stir in cream and beef, cook 5 minutes.

  • Top bowls with cheese, broil until melted.
