2 cups pancake mix
1 cup milk
1 large egg
2 tbsp maple syrup
1 cup cooked sausage, chopped
Cooking spray
Preheat oven to 350°F (175°C). Grease mini muffin tin.
Cook sausage, chop into small pieces.
Mix pancake batter with milk, egg, and syrup.
Spoon batter into muffin cups, add sausage, then cover with more batter.
Bake 15–18 minutes until golden.
Serve warm with syrup or butter.
