12 oz smoked sausage, sliced
1 can black beans, drained and rinsed
1 cup long-grain rice
1 onion, chopped
1 bell pepper, chopped
3 cloves garlic, minced
2 cups chicken broth
1 tsp cumin
1 tsp smoked paprika
Pinch cayenne pepper
1 tbsp oil
Fresh cilantro for garnish
Cook sausage in a skillet until browned. Remove and set aside.
Sauté onion, bell pepper, and garlic in oil.
Add spices and rice, stir to coat.
Pour in broth, cover, and simmer 15 minutes.
Stir in black beans and sausage, simmer 5–7 minutes more.
Fluff rice, garnish, and serve.
Add hot sauce for spice.
Swap sausage type for variety.
