2 medium cucumbers (thinly sliced)
2 sweet bell peppers (red, yellow, or orange, sliced)
1 small red onion (thinly sliced)
3 tbsp olive oil
2 tbsp red wine vinegar (or apple cider vinegar)
1 tsp honey (optional)
2 tbsp fresh herbs (parsley, dill, or basil)
Salt and black pepper to taste
Slice cucumbers, peppers, and onion evenly.
Whisk together olive oil, vinegar, honey, salt, and pepper.
Toss vegetables with dressing until coated.
