2 cups mashed potatoes
1 cup shredded cheese
1 beaten egg
½ tsp salt
¼ tsp pepper
½ cup flour
1 cup breadcrumbs
Optional: herbs, paprika, bacon, or extra cheese cubes
Mix mashed potatoes, cheese, egg, salt, and pepper.
Form tablespoon-sized balls, optionally adding cheese inside.
Roll in flour, dip in egg, coat with breadcrumbs.
Bake at 400°F for 15-20 min or fry in 350°F oil for 3-4 min.
Cool slightly and serve with dipping sauce.
