1 lb ground beef
3–4 medium potatoes, diced
1 onion, diced
3 garlic cloves, minced
1 can (14 oz) diced tomatoes
1 can (15 oz) pinto beans, drained
1 cup corn
4 cups beef broth
4 oz cream cheese, softened
1 tsp chili powder
1 tsp paprika
Salt & pepper to taste
Brown ground beef in a large pot. Drain grease.
Add onion and garlic. Cook 3 minutes.
Stir in potatoes, corn, and seasonings. Cook 2 minutes.
Add broth, tomatoes, and beans. Bring to boil.
Simmer 20–25 minutes until potatoes are tender.
Stir in cream cheese until melted. Adjust seasoning.
Serve hot with cornbread or crackers.
