Creamy Cowboy Soup Recipe

Ingredients

  • 1 lb ground beef

  • 34 medium potatoes, diced

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 1 can (14 oz) diced tomatoes

  • 1 can (15 oz) pinto beans, drained

  • 1 cup corn

  • 4 cups beef broth

  • 4 oz cream cheese, softened

  • 1 tsp chili powder

  • 1 tsp paprika

  • Salt & pepper to taste

Instructions

  • Brown ground beef in a large pot. Drain grease.

  • Add onion and garlic. Cook 3 minutes.

  • Stir in potatoes, corn, and seasonings. Cook 2 minutes.

  • Add broth, tomatoes, and beans. Bring to boil.

  • Simmer 20–25 minutes until potatoes are tender.

  • Stir in cream cheese until melted. Adjust seasoning.

  • Serve hot with cornbread or crackers.
