Creamy and Hearty Sausage Potato Soup Recipe

  • 1 lb Italian sausage

  • 5 medium potatoes, diced

  • 1 onion, chopped

  • 2 carrots, sliced

  • 2 celery ribs, chopped

  • 3 garlic cloves, minced

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions

  • Brown sausage in a large pot. Remove and set aside.

  • Sauté onion, carrots, and celery until soft. Stir in garlic.

  • Add potatoes and broth. Simmer 15-20 minutes until tender.

  • Return sausage, add seasonings, and stir in cream. Simmer 3 minutes.

  • Garnish with parsley and serve hot.

Notes

For a thicker soup, mash some potatoes into the broth.
