1 lb Italian sausage
5 medium potatoes, diced
1 onion, chopped
2 carrots, sliced
2 celery ribs, chopped
3 garlic cloves, minced
4 cups chicken broth
1 cup heavy cream
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish
Brown sausage in a large pot. Remove and set aside.
Sauté onion, carrots, and celery until soft. Stir in garlic.
Add potatoes and broth. Simmer 15-20 minutes until tender.
Return sausage, add seasonings, and stir in cream. Simmer 3 minutes.
Garnish with parsley and serve hot.
For a thicker soup, mash some potatoes into the broth.
