1 cup cottage cheese
2 small apples, finely chopped
2 eggs
½ cup rolled oats or almond flour
1 tsp cinnamon
1 tsp baking powder
1–2 tbsp honey or maple syrup (optional)
Preheat oven to 350°F (175°C). Grease a mini muffin pan.
Mix cottage cheese, eggs, and sweetener until smooth.
Stir in oats, cinnamon, and baking powder.
Fold in apples. Spoon into muffin cups.
Bake 18–20 minutes until golden and set.
Cool before serving.
Blend cottage cheese for a smooth texture.
Add nuts or raisins for extra flavor.
Store in fridge or freezer for later.
