2 cups cottage cheese
2 medium apples, chopped
2 eggs
2 tbsp honey or maple syrup
1 tsp cinnamon
1 tsp vanilla extract
½ tsp baking powder
2 tbsp oats or flour (optional)
Preheat oven to 350°F (175°C). Grease baking dish.
Blend cottage cheese, eggs, honey, vanilla, and baking powder until smooth.
Stir in apples and cinnamon.
Pour into dish and bake 35–40 minutes until golden.
Cool 10 minutes, slice, and serve.
