2–3 apples, chopped
2 cups cottage cheese
2 large eggs
1/2 cup rolled oats
1/4 cup honey or maple syrup
1 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
Chop apples and toss with lemon juice.
Mix cottage cheese, eggs, honey, and vanilla until smooth.
Stir in oats, cinnamon, and salt.
Fold in apples and spread mixture into dish.
Bake for 40–45 minutes until golden and set.
Cool 10 minutes before serving.
Use Granny Smith for a tart flavor.
Add nuts or berries for variation.
Best served warm but tasty chilled too.
